Giblet Stock
Ingredients:
Giblets of a turkey or goose
1 Onion, sliced
1 Carrot, sliced
1 Bunch of mixed herbs
1 quart water
Directions
Place all the ingredients in a large saucepan with just enough water to cover.
Bring to the boil, cover and simmer gently for 3 to 4 hours.
Strain and skim off any fat.
Yield:
Makes about l litre/2 quarts
