Potato Latkes This is a traditional favorite during Hanukkah. Ingredients:
potatoes - 6 Directions: Grate peeled potatoes and place in colander. Rinse in cold water to wash off starch. Drain. Combine with remaining ingredients, mixing well. Drop by spoonfuls into at least 1/4" (0-5 cm) deep hot oil. Fry until brown on both sides, turning only once so that pancakes do not become soggy. Remove from pan and place on paper towels to drain excess oil. Continue with remaining batter until used up, adding more oil when necessary. Serve with applesauce on the side. Variation: Zucchini or Carrot Latkes: Substitute 5 medium zucchini or 5 medium carrots for potatoes. [Holistic Living Home][Holisticonline Home]
