Simple Christmas Fruit Cake By Mrs. K. M. Mathew Ingredients
1 Margarine - 100 grams (3.5 oz.) 2 Powdered sugar - 300 grams (10.5 oz.)
3 Egg yolks - 4
4 Preserved orange peel cut into small pieces - 100 grams (3.5 oz.) 5 Cashew nut chopped fine - 100 grams (3.5 oz.) 6 Sugar - 4 des. sp.
7 All purpose flour - 250 grams (9 oz.) 8 Milk - 1 cup 9 Egg whites - 4
10 Lime juice - 1 des. sp. Soften the margarine and ghee and mix with sugar and cream it soft. Add to it yolk of the egg one by one along with vanilla essence. Then add the 4th item and beat well for sometime. Add the cashew nuts also in a hot skillet put 4 dessert spoons of sugar and mix stirring continuously till it turns black. Add a cup of water into it and stir without forming lumps. When it thickens remove from fire and when cool add to the above cake mixture. It adds taste to the cake. But if it is over burnt it will taste bitter. Mix the all purpose flour, baking powder, powdered cloves, cinnamon and nutmeg and alternately add with milk and slowly fold in. Whisk the egg white fluffy and sprinkle the lime juice and sugar to it and mix. Add this slowly into the cake mixture. In a greased papered cake tin bake this in a slow oven at 300 degree.
