Sweet Potato with
Miso Gravy
Ingredients:
2 cups diced 1/2" sweet potato
1 Cup diced onion
2 oz. red miso
1/2 tsp. sea salt
1 qt. water
pinch ground pepper
Directions
Bring water to a boil. Add 1-1/2 cups of sweet potato, 1/2 cup of onion, salt, and pepper.
Simmer 20 minutes.
Puree. .Add 1/2 cup of sweet potato and 1/2 cup yellow onions.
.Remove from stove.
Mix in miso.
Goes well with vegetable meatloaf.
Yield:
8 servings (4 oz. each)
