Iced Tomato Soup from Spain
Ingredients
1 lb. (450 gms) ripe tomatoes
1 large Spanish onion
chopped green and black olives
1 clove garlic
chopped parsley
sweet basil leaves
2 tblsp. red wine
1.5 tblsp. olive oil
1 tsp. sugar
paprika
salt
fresh black pepper
Directions
1. Slice the onion very thinly and sauté in hot oil until tender.
2. Add the tomatoes and cook until tender (add more oil if necessary).
3. Season with salt, pepper, paprika, sugar and sweet basil leaves to your taste. Now add the minced garlic and the wine.
4. Add a little water if soup is too thick. Chill well. Serve garnished with chopped olives and parsley.
